These old favorites were dessert on Sunday after dinner. The ones that were left over were baggied up and sent home with the boys.
BUT then....I kept thinking about them ( the cookies-not the boys). Wishing I had saved a few for myself.
Finally, I gave in and went to the kitchen to make another half of a batch. You may think I showed a little will power by making only half a batch...but the truth is that I only had enough oatmeal to make a half.
Look how small they are! Surely not many calories there ! Plus, they contain oatmeal, milk and peanut butter. That's 3 of the food groups!
No Bake Chocolate Oatmeal Cookies
2 cups sugar
2 T cocoa
1/2 cup butter
1/2 cup milk
1 t. vanilla extract
1/2 cup peanut butter
3 cups minute oats
In a pan, mix together sugar and cocoa. Add milk and butter and bring to a boil. Boil 1 full minute.
Remove from heat and allow to cool slightly..about 3 minutes or so. Add vanilla and peanut butter. Stir until peanut butter melts. Stir in oats then drop by spoonfulls onto waxed paper.
Allow to cool.
I like to use slightly less oats to keep the cookies fudgy rather than dry and crumbly.
