creamed corn

This creamed corn recipe has been a favorite of ours for several years.  Everyone likes it but it's definitely not a low-cal recipe (I'm not sure if I have any of those!).


Creamed Corn
2 - 12 oz. packages frozen corn
2 Tbsp. butter
2 Tbsp flour
2 or 3 Tbsp. sugar
1 tsp. salt
1/4 tsp, pepper
1 cup half & half (or cream)
1 cup milk
1/2 cup grated parmesan cheese



In a large skillet, melt butter, then add frozen corn. Stir and cook over medium high heat until corn is heated through and starting to brown a bit.


Reduce heat to medium. Sprinkle flour over corn, toss to coat, then stir in sugar, salt and pepper.


Pour in half & half and milk. Stir and simmer until mixture is thickened.


Add parmesan cheese, stir and it's ready to serve.



 For Sunday dinner we had Italian Beef on buns with swiss cheese, Four Bean Salad, Creamed Corn, Crash Hot Potatoes, and fresh cantaloupe chunks.


Frosted Brownies were for dessert.

I know that forks and napkins should be on the left when you set the table...but I don't like seeing the knife left alone on the bare table. So I just put it all on the right. We are all right handed, so why not just make it easy for everyone?
