cauliflower casserole

I tried a new recipe for cauliflower, it's based on a recipe I found online, but I made several changes.

This is the recipe as I made it. My family liked it pretty well.

Cauliflower Casserole
1 head of fresh cauliflower
red bell pepper (optional)
1 cup shredded cheddar
2 - 3 oz. Velveeta cheese, diced
1 cup sour cream
seasoned salt
panko bread crumbs
parmesan cheese


Chop cauliflower into florets and coarsely chop red bell pepper. Place on a cookie sheet in a preheated 400 degree oven and bake about 10 minutes or until cauliflower starts getting tender.


Combine the roasted cauliflower and peppers in a bowl with shredded cheddar, Velveeta, sour cream and a generous sprinkle of seasoned salt.  Toss ingredients to mix well.


Pour into a greased baking dish and sprinkle with Panko crumbs and parmesan.


Bake at 350 degrees about 30 minutes until cheese is melted and edges start getting brown.



We had this for Sunday dinner, along with pork roast, sauerkraut, mashed potatoes and gravy, pinto beans, and sweet cornbread from a mix.  Please excuse the chaotic look of the table. Everyone is carrying over dishes and trying to get the food on while it's hot.


Oatmeal Scotchies were for dessert.



We have a certain time that we eat our dessert on Sunday...but yesterday we got suspicious when Lonnie kept making trips into the kitchen to "warm his coffee" and so forth, before dessert time.

He finally gave himself away when he was caught chewing as he walked back into the front room.
Yep...sneaking cookies!  Busted!
