frosted brownies

I had been planning to make a pumpkin roll for Sunday dessert...but I developed a hankering for something chocolatey. Like brownies!

This is a nice chocolate brownie recipe- especially if you are generous when measuring out the cocoa!

Frosted Brownies
1/4 cup cocoa
1/2 cup butter
4 eggs
pinch of salt
2 cups sugar
1 tsp. vanilla
1 cup flour
 1 cup chopped walnuts

frosting
8 oz. cream cheese, softened
1 Tblsp. butter, softened
1 cup confectioners sugar
1/4 cup cocoa




Melt 1/2 cup of butter in microwave and stir in 1/4 cup cocoa. Set aside.
Beat eggs and salt in mixer bowl until frothy. Gradually add sugar, beating until light and creamy.
Fold in cocoa mixture and vanilla.


Add flour to mixture and beat until smooth. Mix in walnuts.



Pour into a greased 9x13 pan and bake in a preheated 325 degree oven for 25 to 30 minutes. Do not overbake.

Mix frosting ingredients and spread over brownies when they are cool.



The cream cheese frosting keeps helps to tone down the sweetness and play up the rich fudgy taste. This is the best brownie recipe I have found.
