potato salad with cooked dressing

If you want to make a potato salad that is a whole lot of trouble, then I have just the recipe for you!

It is pretty good though. Definitely make it the day before you want to eat it.

Ingredients
6 red potatoes, cooked and diced ...leave the skins on
6 boiled eggs, diced...take the shells off
1 small onion, finely chopped
1 cup diced celery
1 t. Salt

Sauce
2 eggs, beaten
1/3 cup sugar
1 t. cornstarch
1 t. salt
1/2 cup vinegar
5 oz. half & half or evaporated milk
1 t. yellow mustard
1/4 cup butter
1 cup Miracle Whip

While your potatoes and eggs are cooking you can start on the sauce.
In a non stick skillet, whisk together eggs, sugar and cornstarch. Add salt,vinegar, half&half and mustard. Mix well and cook over medium heat until thickened.



Remove from heat, add butter and stir until melted.

When mixture is cooled; add Miracle Whip.

Meanwhile mix your cooked and cooled potatoes and eggs together with onion, celery and salt in a large bowl.

Pour the cooled sauce over all.



Mix well. Add salt to taste and pepper if desired. Refrigerate overnight.
