flourless chocolate cake - for a birthday

We celebrated Chopper's birthday this weekend.
I had made one of these flourless chocolate cakes a few weeks ago and he said at that time he would like one for his birthday cake.

It isn't nearly as showy as the birthday cakes I usually make but it makes up for it with yummy chocolatey goodness!


Flourless Chocolate Cake
1/2 cup water
3/4 cup sugar
1/2 tsp. salt
18 oz. semi sweet chocolate
1 cup butter, sliced in chunks
6 eggs


In a small saucepan, over medium heat, stir together water, sugar and salt, until mixture comes to a gentle boil. Set aside.

Melt chocolate chips in the microwave - stopping to stir frequently...just until chocolate is completely melted - don't over do it!

Pour chocolate in to a mixer bowl and with an electric mixer beat in slices of butter a little at a time.

Add warm sugar water mixture, mix.   Then beat in eggs, one at a time.

Boil some water. Preheat the oven to 300 degrees. Grease a 10" spring form pan and wrap aluminum foil around the bottom and about 1" up the sides.

Pour batter in to prepared pan and set the springform pan into a larger pan. Pour boiling water into this larger pan no higher than the top of your foil.  I use the bottom of my oven broiler pan. It's a perfect fit.


Bake about 45 minutes until mixture is set. It will not have a cake like texture...more of a soft fudgey consistency.  Cool for about 10 minutes then run a knife around the sides of the pan, release the ring and remove it.


Refrigerating will firm it up a little more. I like it room temperature or slightly warm.  With vanilla ice cream!


Happy Birthday Chopper!  He said he is 25 but I didn't have quite enough candles!






We gave him a couple of things from his wish list...a new iPod (music player) and 2 books.


He looks pretty good for a 25 year old, I think!
